I don't really see a lot of grease in mine after a cook. I usually steam clean it the way Ben shows in the videos on the website and I have a metal bucket that is around 4 or 5 gallon in size under the grease drain which catches all of the water and debris then I just dump it. There is very little grease if any in it though. Most of the grease is burned up during the cooking process because of the way the smoker is built.
I guess you probably do have quite a bit to dispose of if you are cooking 8 butts at a time. I will never do that many, I usually only do one at a time or maybe 3 or 4 racks of ribs at a time so I don't have anywhere near the grease that you have. Putting it in a fire pit sounds like a good idea if you can get the water seperated out.
