We are a new restaurant in MD that just purchased a Lang 108. We already upset the neighbor just during the seasoning process and are looking for tips to move it indoors to a separate building on the property. This will be the first time I have tried an indoor smoker and would like to hear from others that have done so, or for someone to tell me that I am an idiot and don't do it!
look up McClure's Barbecue in New Orleans and call Neil. He runs his 2 restaurants on a 108, and had similar problems with neighbors. He moved his smoker to his second location and from what I understand is in the process of building an enclosure for it. he should be able to give you the tips you need.
