This is my first smoke doing a pork butt. It's also the first time I had hickory split. I have Hickory, Cherry and Maple.  I've been told that straight hickory would be too much and that I should mix with maple 50/50 ... comments / opinons?

DBA1954: I think it depends on the smoke taste you're looking for. Most BBQ sites like howtobbqright.com suggest cherry because it's a mild wood. Another site said "use your favorite wood". I don't use a lot of hickory or mesquite because I think they add a stronger flavor than cherry and I don't like the smoke flavor to overpower the meat. I'm not familiar with maple but if I had the choices of wood you have available I'd probably go with all cherry or a combination of cherry/maple. Just my opinion for what it's worth

meant to say first time on the lang doing a butt ... anyway just got done splitting all my wood down to managable sizes ... hickory has got to be the worst wood to split, thank heavens I have a small hydraulic splitter !

Hickory is a breeze compared to pecan!!  Darn fibers twist and turn all directions....That being said, I pretty much uSe pecan exclusively.  And as long as you keep that clear heat flowing from your stack you will never over-smoke your meat!!
