Trial run chicken lega and thighs

I have an order for 200 pounds of chicken legs/thighs next weekend, so I did a trial run of about 30 pounds yesterday on my Lang 84 Deluxe with char griller - sorry no after pics, and no leftovers either!!

I think I am ready for the 200 pound cook! Got her dialed in for chicken !

Looks like you got it going on!!! Is that yeast bread you got in those pans? How hot you cooking? Never tryed a yeast bread in one yet, How did it work out? temp, time?

Yes, its a standard white bread recipe! Let rise in the house and smoked for about 35 min at 350 - much like the oven!! I started doing the chicken hot on lower rack for about an hour with great reviews. If top rack is at 350, lower is around 275 allowing chicken to bbq rather than smoke - skin even crisps up a bit with some turning etc.
I did pissa in it also - same basic white bread recipe with some honey and whole grains, put in tin pans for about half hour - they too turn out great!

Looks very good.  I haven't tried bread yet, but it wont be long.
