need advice on cooking temps and controlling them

Just got done seasoning my Lang 48 patio going to use on Sunday.How should I have the box vents how far open and stack also.Whats the best way to control the temp.

I keep the stack wide open, one side pinwheel closed all the way and the other open 50% once you have it warmed up, I usually build a fire with the firebox door open and the cooker door closed over the latched position and let it warm up for about a half hour, I like to get it around 300, then close the vents and let it settle in to around 250.
