Leg Quarter & Hot N Fast brisket...questions

Anyone cook briskets hot and fast on a Lang?   How are the results and could you post some step by step instructions?

I would like to cut down on my all nighters.

How do you cook chicken leg quarters on your smoker?   I was thinking of smoking them in the main chamber than throwing them on the chargriller to crisp up the skin.  Any suggestions?

I have a Lang 84 Deluxe latest gen. that I recently bought off craigslist.  The temperatures arent as even across the grate as I would have expected.  40F difference give or take.  What do you recommend to even out the temps?   The top rack is much hotter than the lower rack.
