Fire Box and Heat.

I am not lucky enough to have a Lang but I do have a 36" heavy steel smoker with a large fire box. I can't seem to get my heat much over 225. Perfect if all I wanted to do was smoke. If I load the interior with charcoal then the winds in Calif. blow ashes all over my meat so I love keeping the fire separate. I know it is difficult to help me without a picture of the unit. Usually I smoke the meat for several hours then move it over to the propane grill to finish the job.

Heat

Are you cooking with charcoal or wood? and yes photos would help, but are all the vents open on the fire box? May need to open firebox door a half inch or so to draw more air, Smoke stack should be open full.
Just some thought.

I wonder how big the opening from the firebox to the grill should be? Maybe mine is too small? Thanks so much. I am going to try and open everything up.
I have cooked with both charcoal and wood one the other and both at the same time. Still the same results.
