Re: chicken rub / chicken marinade

Mr. Piggy; Folks think that cooking competition (or backyard chicken)  chicken is easy -- it's not. Chicken is low in fat and dries out easily especially when cooked LOW & SLOW. I've tried a bunch of ways from "Myron Mixons Cupcake Chicken to "How to BBQ Right Butter Bath", which I felt was more like POACHING the chicken than cooking it!!

Here's how I now cook Chicken thighs. I first trim the excess fat when the chicken is cold -- it's easier that way. I brine it for 6 hours in ZESTY ITALIAN in a ZipLock bag. I stab the chicken with a fork so the marinade can get in and the fat can get out. I don't inject. I cook at 300F and look for an internal of 165F.

One hour before the cook, I apply a RUB of veggie oil and GrillMates -- use any spice you like. For smoke I use either apple, cherry or hickory. I'm not sure about a MOP but smoke likes a wet surface but I don't want the smoke to over power the meat or the mop to wash off the rub so I MOP sparingly. The mop I use consists of 1/2 cup beer, garlic & onion powder, sage & thyme, salt & pepper, a dash of hot sauce & cider vinegar. I cook over a water pan and I don't glaze.

My present method would not win any competitions but my previous efforts to produce a product that was tender, moist and crispy that would stisfy judges wasn't working --in fact, I didn't want to eat it.

Neighbors now like my chicken. Chicken"s cheap -- give my method a try and see what you think. This post is my opinion (free advise). It's not intended to ionfluence anyones judgement.
