Hi, thanks for asking. It turned out perfect. I should have taken pictures. Very moist and great flavor. I used apple wood. Next time I plan to use just pecan just to see the difference. The recipe was dead on for cooking times. I chose the low and slow method. Other than experimenting with different woods, I would not change a thing. You won't be disappointed. Happy Holidays
if you low/slow try to spatcock the bird. It will finish faster and you can do bigger birds without worry...
Great advice, anything over 13 pounds or so can be in the danger zone too long for low and slow, but I try to cook birds around 275+ and remember dont cook anything under a bird if you have it on the top shelf
