I suggest you season it as instructed and do a few test runs to get the feel for it before putting meat in it. There are videos on the Lang website and on YouTube if you haven't already researched them.
I would suggest getting a digital thermometer to measure temperature. Preferably one with multiple probes. The thermometer on the Lang is accurate at that point but not throughout the cook chamber. I use a probe on each end of the top grate hanging down a few inches from the bottom grate.
