I have a Lang 84 and have no trouble smoking butts, but my ribs leave a lot to be desired!!!  

I use the 3 -2-1 method and smoke at 250. Ribs fall apart and not that good. HELP!!!

You may have to make changes to your liking, What type of Rub do you start with, when you foil, what sauce do you use, and finishing do you use more sauce? Is the Flavor not to your liking, what is it that you do not like?
Hard to help with out info. The 3-2-1 is one of the best ways to go, as far as I think. For me the rub is first a for most than a good sauce when foiling.
From what you say, all I can tell is you may not have enough or the right seasonings!
What do you think you are missing?

Yeah, ribs and butts are very different in how you smoke them. Butts, whether you are cooking hot and fast or low and slow, you are basically looking for that temperature (I like to pull mine at 205 degrees), where as ribs, you are looking for not so much temperature, but that magical texture. I agree with Red about the 3-2-1. I use it as basic guideline and I must say my ribs are killer! What brand babybacks are you using? I only use Smithfield brand. You may want to adjust your rub as Red suggested as well. When you put them in foil try spreading some butter and brown sugar on them and see how they turn out. If they are too soft or fall off the bone to easily, back off your foil time and see if that helps out. I also stopped coating both sides of the ribs with rub. I don't apply rub to the back side anymore. I let the heat and smoke penetrate the back side. I think coating both sides is overkill. You want to make sure people can taste the meat and not just the rub. Hope this helps! Let us know how your next ribs turn out.

I use Smithfield Spare Ribs and apply my rub. I smoke them at 250 for 3 hours. I remove them and place each in foil. I add honey, brown sugar and one cup apple juice. I smoke for 2 hours then remove them from the foil and continue to smoke for 1 hour.

sounds like you are overcooking those bro.  you are trying to get where its not "fall off the bone" right? that's what they look for in comps, etc.

Ok ugalie7, but "they leave a lot to be desired"  is no help, what is not to your liking, the taste, flavor, or the meat not the right texture?
I have to say(now that I have a Lang) when it come to BBQ and taste we are our own worst enemies, looking for that taste that makes you say WOW!
What do they not have?

practice practice and then practice.  and oh yeah, practice.  just experiment around with cook times. the 3 2 1 is a "fall off the bone" kind of result when i use it.  some people don't prefer that

it took me about 30 racks to figure ribs out in my 48.....i started out with the 3-2-1 method; and i had the same issue you did....all i had to do to correct it was to change the numbers...try 2-1.5-.75  [2 hours smoke, 1 1/2 foiled, 45 minutes finishing; glaze them when they come outta the foil].  

these times gave me near perfect results....i have done ribs on many different pits [wsm, my smoke-ez, meadow creek ts 250, even me ecb]; and, the lang, with this method, gives money results!

this is for spares, baby backs are for the weak hearted Very Happy  Very Happy

also, it is worth noting that i cook ribs at about 240f AT GRATE LEVEL; WHICH, FOR MY PIT, IS ABOUT 290F AT THE THERMOMETER IN THE LID!
ALWAYS USE A MAVERICK, OR SIMILAR DEVICE AT MEAT LEVEL Exclamation
