How big do you make your coal bed to maintain the heat for a 36' patio smoker?

I just start with a big fire. When its ready to add meat, I close one pinwheel damper completely and close the other one 75 to 80%. From there, I just toss a stick on there every 40 mintues or so and that keeps the 250 range for me.

Better to take the smoker up to 300 then close down the pinwheels to bring down to 225. If you are using charcoalas a coal bed (adding wood for flavor) 5 pounds should get you there.
